Contrary to popular belief, the quality classification of olive oil is not based on its color, but primarily on its acidity (percentage of oleic acid). The lower the acidity, the superior its quality.

Apart from the exceptional Koroneiki variety, what truly elevates our olive oil is the distinctive soil and the unique microclimate of our region.

The olive oil we offer is a pure, natural product from the first pressing of the olive. It balances perfectly between a fruity aroma and a slightly spicy aftertaste, making it the perfect base for any dish.

As its quality is influenced by many factors, it is crucial to know the exact origin of one of the most important goods in your diet.

For us, organic farming is not just a production method, but an integrated management system deeply rooted in respect for nature. It safeguards the environment, the climate, and ecosystem biodiversity at every stage, while firmly protecting consumer health.

Unlike conventional agriculture, we achieve a perfectly balanced ecosystem by seamlessly blending tradition with modern scientific knowledge. We exclusively use natural fertilizers approved under the strict Regulation (EU) 2018/848 to enrich soil fertility. This allows our olives to ripen at their own natural pace, without artificial intensification, accelerated production, or the use of chemical methods.

Harvesting takes place at the ideal period of time using poles. The olives are immediately placed in ventilated crates to ensure optimal airflow and are transported on the very same day to a certified olive mill. By pressing them hours after harvest, we prevent oxidation and ensure that our olive oil retains its full flavor profile and nutritional benefits.

As certified organic growers, we adhere to a strict daily protocol. Our olives are always processed first in meticulously cleaned machinery at the start of the production cycle. This eliminates any risk of cross-contamination with conventionally grown olives, guaranteeing the absolute purity of our olive oil from the first drop to the last.

During production, the olives are crushed exclusively by mechanical means, followed by malaxation and extraction. This entire process is carried out under strictly controlled conditions, with temperatures never exceeding 27°C.

This method of cold extraction is the ultimate guarantee of our olive oil’s superior quality (acidity below 0,4%). By protecting the olives from high heat, we ensure that vital vitamins, delicate fatty acids, antioxidants, polyphenols, and rich aromas remain perfectly intact,delivering a product of maximum nutritional value.
